Learn Food Preservation, Test Canner Lids -- Cherokee County, NC

Food Preservation Made Easy
There is nothing better than eating food from your garden in the summer, unless it is eating food in the winter you have preserved during the summer months. There are many ways to preserve the bounty from your garden and enjoy it later, when fresh fruits and vegetables are not available.
The NC Cooperative Extension Service is sponsoring a workshop in Cherokee County on how to preserve food properly and safely, called "Food Preservation Made Easy" from 7:00 pm - 8:30 pm on Thursday, July 7, 2005, at the Penland Senior Center in Murphy, NC.
Extension Family and Consumer Science agents Jessica Roberson from Cherokee County and Cheryl Beck from Jackson County will lead the workshop. Topics covered will include:
- canning high and low acid foods
- pickling
- jams and jellies
- freezing and dehydrating foods
Pre-registration is required by Tuesday, June 28, 2005, and there is a registration fee of $5. Each participant will receive a current copy of the Ball Blue Book and handouts.
Canner Lid Testing Dates
It's that time again to dust off those pressure canners and get them to the Cherokee County Cooperative Extension Office for the annual testing of the canner lids.
This year's dates are:
- 8:00 am - noon, Friday, June 24, 2005
- 8:00 am - noon, Tuesday, June 28, 2005
- 8:00 am - noon, Friday, July 8, 2005
- 1:00 pm - 5:00 pm, Tuesday, July 26, 2005
You don't have to call and make an appointment, just bring your canner lid during one of the above listed dates and times.

Host Families Needed for 4-H International Exchange Students -- Cherokee County, NC

(Context Tag: Cherokee County NC) Are you interested in learning about another culture, eager to include a student in your family, proud to share your American culture and lifestyle, warm, welcoming and open-minded? Perhaps your family should consider hosting an "international" exchange student. You don't have to be involved in 4-H to participate.
The NC 4-H International Exchange program participates in the NC Japanese/Korean High School Exchange program. Currently, there are two female students who need a welcoming family to serve as hosts for one year.
Here's a little about each of them:
- The first student will be enrolling in the 11th grade. She is 16 years old, has one 14-year-old brother, and would like to be placed with a family who lives in an urban or non-farm, rural setting. She is in the brass band and enjoys playing the clarinet. While in the United States, she would like to participate in the band. She also enjoys writing through the use of calligraphy. She is an A/B student and her favorite subjects are English and music. She is proficient in English and is described as cheerful and pleasant.
- The second student will be enrolling in the 10th grade and is 15 years old. She has an 18-year-old sister. Her father is a teacher, and her mother is a housewife. She would also like to be placed with a family who lives in an urban or non-farm, rural setting. She enjoys drawing, reading, camping, playing the cello and piano, skiing, and swimming. She is an A student and enjoys English essay contests and pop song contests. Her favorite subjects are English and fine arts. She is proficient in English and is described as warm-hearted, thoughtful, generous, and motivated academically. She would also like to be involved in a 4-H club.
We also have the 4-H Future Leaders Exchange High School Program. The FLEX students come from 12 different countries that once formed the Soviet Union. These exchange students are unique because they have won scholarships funded through the U. S. State Department to study in a U. S. high school and live with a host family for one year.
There are two female students in this category who need a welcoming family to serve as hosts for one year.
Here's a little about each of them:
- The first student will be enrolling in either the 11th or 12th grade. She is 16 years old and has no siblings. Her mother is a teacher. Her interests include singing, basketball, bowling, dancing, cooking, reading, participation in school clubs, debating, and languages. She is an A student and her favorite subjects are English, American literature, French, history, government, biology, and P.E. She also enjoys basketball, participating in the Debate Club, and singing solos for concerts. She is extremely proficient in English and is described as being highly respected among her classmates, talented in singing, dependable, and open to new experiences.
- The second student is 17 years old and will enroll in the 12th grade. She has one 12-year-old sister. Her father is an engineer and her mother is an electrician. She prefers to be placed near the mountains with a family that has no cats and are non-smokers. She is interested in languages, science, environment, guitar and drama. She also enjoys playing the guitar. She makes straight A's and her favorite subjects in school are chemistry, history, and language. She is proficient in English and is described as bright, diligent, communicative, cheerful, good tempered, a talented musician, persistent, and strong-willed. She also has great leadership potential
All students will arrive at the end of July or the first week of August. Students must attend a public high school. They do not need to have a separate bedroom, but do need to have a separate bed and place to store their belongings. Host families are responsible for meals, transportation, and supervision.
The students have health coverage and money to cover costs of clothing, school and personal items.
Families interested in becoming a host family must complete an application, provide three references, and participate in orientations.
Host families are assisted throughout the year by Carolyn Langley, Rudolph County extension director who serves as the state 4-H exchange coordinator, and by Stuart Bullock, who serves as assistant state 4-H exchange coordinator.

Kiffney Griggs Wins 10 Ribbons in District 4-H Horse Show -- Cherokee County, NC

(Context Tag: Cherokee County NC) Kiffney Griggs, a member of the Cherokee Rider's 4-H Horse Club, competed recently in the West District 4-H Open Youth Horse Show held in Fletcher, NC, at the Western North Carolina Agricultural Center. More than 60 youth competed from all over the western part of the state in more than 80 events.
Kiffney took home 10 ribbons, including the reserve champion ribbon in the Games Events. Kiffney loves to barrel race and compete. She is 13 years old and goes to Hiwassee Dam High School. Kiffney is planning to go to the State 4-H Horse Show in Raleigh, NC, in July.
Youth must place at the district level and earn enough points to quality for state, which Kiffney did. Kiffney competed on two horses at the show. She is the president of the Cherokee Rider's 4-H Horse Club. This show is just one of the activities open to the youth of the 4-H.

The Cherokee Rider's 4-H Horse Club also participated in the West District 3 Day Horsemanship Clinic from June 6-8, 2005. This clinic is open to all youth, not just 4-H, to better themselves and their horsemanship abilities. They have a lot of fun, sleeping in the stall next to their horse's stall, meeting other youth including non-4-H-ers, and learning from certified instructors in their chosen disciplines (English or western riding). The Cherokee Rider's 4-H Horse Club is always welcoming new members and is now opening up to youth interested in other livestock animals, not just horses.
